famous restaurant Tonino at Garlasco, Italy, this a collaboration
to bring in the most authentic flavours of this wonderful
land to Delhi.

The cuisine is inspired by the various regions of Italy whether
it is cold mountainous north or the warm southern sea coast
with its many splendid olive trees. In true Italian style,
attention has been paid to the natural flavours and presentation
of the food.
Simple, exquisitely prepared dishes are the Italian contribution
to the world of good food. At Tonino, it is the sweet life
that we celebrate. A simple but romantic region to bring alive
the varying flavours and indulgences; the traditional bonhomie
of a well- prepared meal shared with friends and family; with
love and laughter.
Adding to this is the creative vision of Model and Entrepreneur
Simar Duggal (Parmeet’s Sister) who adds her own distinct
fashion and aesthetic sensibility to Tonino.
Simran Sawhney and Remen Chopra who have spent substantial
time living in Tuscany bring in the minute attention to detail
and provide the distinct rustic charm of Tuscany to Tonino.
The Menu has been finalised by Executive Chef Suman Sharma
who trained with the European Champion and Five Star Chef
Tonino Generale of Gerlasco – Italy. He has also worked as
Executive Chef at the Palace of HRH Prince Saud – Al Faisal
Riyadh, Saudi Arabia. He also recently won the Jack Daniel
BBQ Sauce Competition 2003.
The Pizzeria:
In the true spirit of Tonino, Pizzas make for a dominant part
of the Menu. The Pizzas are made in a special wood fired oven
specially imported from Italy giving the Pizza a Tonino Stamp.
Here Chef Suman Sharma has been inspired by the European Champion
and 5 Star Chef Tonino Generale . Tonino Pizzas maintain the
lightness, fragrance and originality with a special thin,
delicate base. The oven which has the pride of place at Tonino,
offers the ever popular Margherita; the Vesuvio with it’s
signature Parma Ham or the Tonino Fantasia, a delicious mix
of four cheeses, smoked chicken ham, lamb , pepperoni, black
olive caviar with egg.
Ofcourse, no Italian meal can be complete without dolce (desserts)
where you end the gastronomic delight with a Lasagna di Ciccolaato
– layers of chocolate cake and butter cream, topped with morsels
of semi – sweet chocolate or a summery fresh fruit salad with
ice cream. As a grand finale Tonino brings you original Espresso
Cappuccino and Mocha made from coffee beans specially imported
from Italy.
A note on the Cuisine
Italian Cookery has its origins inGreek, Middle Eastern, and
Roman Cuisine. The Roman’s enjoyed good food, adopted many
of the food habits of their slaves – the use of spices and
sweet sauces for game and vegetable came from the Middle East
. Further refined, during the Renaissance, Italian food has
its own distinct stamp and has astounded the entire world
with it’s variety.
Tonino, has a menu that includes the favourites of the many
regions of Italy. You begin your meal with Antipasti (appetizers),
which use the freshest of cheese, meats and vegetable. The
Antipasti Misti (mixed) combines all the traditional favourites
like Parma, Ham, Salami, Chicken Ham, Smoked Salmon, Marinated
Artichokes and olives; while the vegetarian selection has
the Melanzene al Tonino, a shallow fried sandwich of eggplant
and cheese splashed with coriander oil. Choose from the selection
of soups and salad for the pick of the season. Thick delicious
soups made of meats, vegetables, and biennial herbs such as
carrots and other vegetables, eaten with a sprinkle of graded
cheese and fresh bread, are a rewarding beginning to the meal.
Move on to the Primi Piatti where you can savour the traditional
delights of the region. As executive chef Suman Sharma, Tonino
explains “Pasta, from the best known staple diet of Italy,
it comes in many shapes and sizes. Italian pastas from the
north are most often homemade , with thick and robust shapes.
They include fettuccine and tagliatelle, flat egg noodles
and ravioli, small pouches of dough filled with spinach, cheese,
or savory forcemeats. Or try the southern pastas including
lasagna; various cylindrical shapes, long spiral shaped strands;
the cannelloni”. The Tonino special is the Tortelloni di spinaci
a sauce. Or go in for the Capelli di Angello Con pollo spinaci,
( angel hair pasta with chicken and spinach in wine sauce).
The Secondo Piatti, has a mix of meats, sea food and vegetable
in sauces . Try the Italian tempter, a combination of chicken
escalope vegetable lasagna and capelli alfredo or the chef’s
recommendations ; the open lobster Lasagna with mussels three
pepper and lobster bolognaise. As a part of the Menu BBQ Sauce
speciality has the same unique taste as it was in the jack
Daniel BBQ sauce competition 2003. The meal is fragrant with
seasonings, including the flat – leafed parsley, basil, rosemary,
thyme, sage, and marjoram. Cloves, Cinnamon, nutmeg and saffron
are popular spices, while garlic and lemon juice also make
an appearance in generous portions.
Of course, no Italian meal can be complete without dolce (desserts) where you end the gastronomic delight with a Lasagna di Ciccolaato – layers of chocolate cake and butter cream, topped with morsels of semi – sweet chocolate or a summery fresh fruit salad with ice cream. As a grand finale Tonino brings you original Espresso Cappuccino and Mocha made from coffee beans specially imported from Italy.
